Liquorice is a confection flavoured with the extract of the roots of the liquorice plant. A wide variety of liquorice sweets are produced around the world, without the liquorice bush (Glycyrrhiza glabra) there would be no liquorice. The blue-lilac flowering bushes achieve a height of one to two metres. The liquorice bush is primarily at home in the Mediterranean region and Central Asian countries. The heavily branched, finger thick roots which have runners that can extend for up to eight metres are harvested in late autumn. A complex procedure produces a thick, black liquid from the root, the starting point for liquorice production.
